Quality of Dairy Preservation

Quantities of ricotta (cottage cheese) were stored in a conventional reefer container and a PRS Thermobox. Macroscopic aspects (color, scent, and consistency), as well as analytic aspects (weight and microbial load) were analyzed. Hereafter the results of these tests:

The TBC (Total Bacteria Charge) of the ricotta preserved in PRS Thermobox reached 59.000 UFC*cm2, the one stored in the cold store reached 586.000 UFC*cm2.
